THE KITCHEN
Among the pleasures of a luxury vacation is undoubtedly the desire to enjoy exceptional cuisine: From breakfast to dinner, the palate is pampered by the young chef Fabian Oberhauser, who not only reinterprets the recipes but also the carefully selected ingredients. The cuisine is creative, innovative, modern, regional, featuring products from the hotel’s own garden, yet also incorporating Mediterranean influences: the product is always paramount and the star of the show.

Among the dishes you can sample in this beautiful, bright restaurant with just a few tables arecreative creations by chef Fabian Oberhauser, such as the starter: langoustine carpaccio combined with coconut, avocado, and grapefruit. Those who prefer something more traditional can try the confit Val Passiria brook trout with celeriac and beetroot. The first courses include intriguing options like fagottini with chicken leg, morels with artichokes and black truffle; among the main courses, the beef fillet with wild broccoli, potatoes, and almonds stands out. The buttermilk mousse, served with meadow sorrel ice cream and rhubarb (from the restaurant’s own garden), is a delightful dance of sweetness. Chef Fabian Oberhauser also personally ensures that each dish is paired with the perfect wine to complement and enhance the flavors of the food.

Winklerhotels Equestrian Experience

In the winter of 2025, Winklerhotels launched a brand-new equestrian experience designed for guests passionate about riding—a true haven for those who love to explore nature on horseback. The riding centre in Mantana, located next to Chalet Purmontes, boasts top-class facilities: two large indoor arenas, the Mountain Arena (20×40 m) and the Skyline Arena (20×25 m), as well as two outdoor arenas for open-air riding.

The variety of horse breeds is a real highlight: Oldenburg, Westphalian, Quarter Horse, Appaloosa, Noriker, New Forest Pony, German Riding Pony, and Shetland Pony. Each horse enjoys spacious 3×4 m stables with 3×5 m paddocks, ensuring comfort and wellbeing. Stables are also available for guests wishing to bring their own horses on holiday.

Whether it’s private or group lessons, English riding, show jumping, dressage, or western riding, or gentle summer rides on horseback or pony rides for the little ones, the programme is designed to let everyone experience the magic of riding in South Tyrol.

Guiding this experience is Klaudia Webhofer, a certified trail riding guide and riding instructor, who oversees the centre with sensitivity and professionalism. ENJOY THE HOUSE LIKE ON HOLIDAY

Ravioli – filled with organic egg yolk, spinach and chanterelles

Regionality, high quality, and freshness are at the top of the Winklerhotels’ chefs’ list. With passion and skill, they create delicacies from the Alpine north and the vibrant south, typical dishes of the Alpine region of South Tyrol.

Fabian Oberhauser, chef at Purmontes – Private Luxury Chalet, has prepared a first course to try at home.

EGG CUTS DOUGH
250 g of fine durum wheat flour
250 g wheat flour, sifted
4 eggs
10 ml of olive oil
a little water

Mix the two types of flour. Mix the eggs with the olive oil. Mix all the ingredients until you obtain a firm dough. Wrap the dough in plastic wrap and let it rest for 30 minutes.

SPINACH FILLING
30 g of butter
60 g of onion
1 clove garlic, finely chopped
150g spinach, cooked and chopped or shredded
1 pinch of salt
1 pinch of ground pepper
1 pinch of nutmeg, grated
120 g of boiled and mashed potatoes
200 g of curd cheese, strained
60 g of parmesan cheese, grated

For the filling, sauté the onion and garlic in butter. Add the spinach, heat well, and season with salt, pepper, and nutmeg. Mix in the mashed potatoes, curd, and grated Parmesan cheese.

Sauté the chanterelles in oil with a little garlic. Finally, add a little cold butter and season with salt and pepper.

FINISHING

Roll out the dough thinly and cut out even circles. Spread the filling into a circle. Place the yolk of an organic egg in the center. Then, place a second layer of pasta on top and press it down to the edges. Cook in salted water for 3 minutes. Serve the ravioli with brown butter, Parmesan cheese, and chanterelle mushrooms.

SHEET POTATOES (8 – 10 PORTIONS)
1 1 kg of cooked potatoes
300 g of flour
3 egg yolks
Salt

Steam the potatoes the day before and then drain them. Mix the mashed potatoes with the egg yolk. Add the flour and roll out with a rolling pin until about 1.5 cm thick. Cut as desired and fry at 180°C for about 1 minute per side.

CRAUCE I
1 kg of sauerkraut
800 ml of water
1 bay leaf
½ teaspoon cumin
4 peppercorns
3 juniper berries
2 onions
1 clove of garlic
150 g of melted butter
salt
flour for dusting

Wash the sauerkraut and cover it with water in a pot. Make a small bouquet garni with the spices (caraway seeds, juniper berries, and peppercorns) and add them. Simmer for about 2 hours. In a second pot, sauté the onion and garlic in butter. Add the flour to bind. Simmer for another 2-3 minutes and stir with a fork, seasoning with salt again.

CUMIN CARAMEL SIDE

Heat the cumin seeds in a pan. Sprinkle with powdered sugar and caramelize.
