The entire renovation project was carried out with attention to preserving the beauty of the location, echoing the close relationship with the Chianti aesthetic through colors, materials, and traditional architecture .
All rooms have distinctive features, with period decorations and frescoes, a harmony that constantly evokes medieval landscapes yet with a contemporary touch. Borgo Scopeto Wine & Country Relais’sstrong connection to the local area meets the flavors and creativityof Chef Pietro Fortunati. Born in 1989, he learned traditional Tuscan recipes from his grand parents at a young age. While study ingeconomics, he dropped out to devote himself to the culinaryarts. After graduating from Le Cordon Bleu School of Haute Cuisine in Florence, he began his career at prestigious establishments in Florence, Rome, and the Tuscan countryside before moving to Borgo Scopeto in 2020, where he oversee sall-day dining projects as Executive Chef.
The most notable characteristic of his cuisine is his love for raw materials,a passion that translatesinto the use of organicallygrown and naturallyfarmed ingredients,sourced from the estate’sown farmand from select local producers. These pleasure sare designed to pleaseboth
the palate and the body. Just like the wine sand extra virgin olive oil produced on the estate.

La Tinaia, contemporary comfort cuisine, a restaurant project by Borgo Scopeto Wine & Country Relais, caters to lovers of contemporary cuisine that maintains a strong local
flavor. It is located in the estate’s ancient cellars, in elegant yet informal spaces, distinguished by large vaulted ceilings . La Tinaia’s outdoor terrace offers panoramic views of the city of Siena and a stunning wisteria pergola adorning one side of the garden.
From breakfast to lunch, the restaurant offers guests local flavors through the offerings of Il Glicine Bistrot , the relais’s other restaurant project .
To delve even deeper into Tuscan therapy, the “La Cisterna” wine bar offers both the opportunity to enjoy a glass of wine paired with local products around a convivial table, as well as the organization of educational activities dedicated to wine, such as Wine Hour , where each day guests can discover three glasses of wines from the estate’s
cellars, such as Caparzo , Altesino , Doga delle Clavule, and Borgo Scopeto, on a rotating basis, and masterclasses featuring special vintages.
Evenings begin and end with the Il Castello cocktail bar, which accompanies guests from aperitif to after-dinner drinks, indoors, in the garden area, or in the outdoor lounge, where a blazing brazier awaits to warm and ignite the Tuscan nights.
Among the signature cocktails by Bar Manager Denis Fuiano , who brought his talents to Borgo Scopeto Wine & Country Relais in 2025 after working in hospitality and luxury mixology, are the Cypress Dream , the Sunset Hill, and the Tuscan Breath.
The first is made with cypress -infused Tuscan Gin, lime and rosemary cordial, and soda water topping ; the second is made with Bitter Bianco, white vermouth, mead, pink grapefruit juice, and a rosé Prosecco topping ; and the third is made with gin, Borgo Scopeto Chianti Classico tincture, grape leaf-infused vermouth, chestnut honey, egg
white, and lemon juice.
LA STORIA DI BORGO SCOPETO
WINE & COUNTRY RELAIS
The name Borgo Scopeto Wine & Country Relais derives from the presence of broom heatherin the area,a shrub used to make brooms. It dates back to the year 1000, when a towerstood there to defend against near by Florence.
It later became a fortifiedsettlement,conquered by the Florentinesduring the period of wars between the Tuscan cities; it was they who, in provocation, erected a Marzocco, a symbolof popularpower, which still stands in the main gardentoday.
From the 14th to the 19th century, the noble Sienese Sozzini family, the owners, transformed the militaryarchitecture into that of the current village. To the tower, they added the manor house, stables, farmers’houses, a chapel, and a cellar,transformingthe propertyintoa true fortifiedvilla-farmhouse.
In 1997, when the Gnudi Angelini family purchased it, they began a careful restoration process that brought back the splendor of its past, transformingthe villageinto a 5-star retreatsurrounded by vineyards, olivegroves, and excellent Tuscan produce. It is the heart of the eponymous Borgo Scopeto farm, well-known for its wine labels and selection of Tuscan extra virgin olive oil.
