Ca’ Apollonio Heritage is an exclusive hospitality project that brings together five centuries of history, eighteen hectares of protected greenery, an organic farm, and a winery – Ca’ da Roman Winery – dedicated solely to PIWI resistant grape varieties, located in Romano d’Ezzelino (Vicenza), between Vicenza and Treviso, at the foot of Monte Grappa, a UNESCO MAB (Man and Biosphere) Reserve.

HAPPY ECOSYSTEM Ca’ Apollonio Heritage embodies a new approach to comfort and emotion, where sustainability is a way of life and every detail engages with the future and beauty in all its forms. From this comes the concept of a “Happy Ecosystem,” where every aspect originates from and returns to nature. Not an abstract idea, but tangible and local – rooted in territorial identity, resource stewardship, and a green economic model. This “eco-system” enhances the culture of work, the privilege of hospitality, and nature itself, creating a positive impact for everyone: staff, guests, and the environment.
The property reduces its carbon footprint through self-produced renewable energy and greenhouse gas emission control, pursues sustainable sourcing aligned with CER (Care’s Ethical Restaurant) certification, and follows the concept of the “50-step kitchen”, offering guests an immersive and fulfilling experience within the UNESCO MAB Reserve of Monte Grappa. In this corner of the Venetian Pre-Alps, a careful renovation of a historic villa has given life to the first boutique hotel in Veneto adhering to CasaClima R and CasaClima Hotel protocols, and to its spa—a sanctuary for reconnecting body and spirit in harmony with the natural environment.

THE BOUTIQUE HOTEL Where history meets the future, the result is timeless, inviting guests to experience true regeneration. The Boutique Hotel features seven rooms in the historic villa, connected to three rooms in the contemporary building, which also houses the SPA, Well-being, and Fitness areas. Ten rooms in total – eight suites and two superior – ten chapters of the same story, offering intimacy, comfort, and a rediscovery of space and time among botanical stages and lounge atmospheres. Personalization, attention to detail, and exclusive service define a stay that becomes a memorable experience.

THE ONLY 5-STAR LUXURY HOTEL IN VICENZA AND PROVINCE From December 2025, Ca’ Apollonio Heritage will be the first 5-Star Luxury Hotel in Vicenza and its province. This official recognition reinforces a hospitality model based on the circular economy, prioritari local suppliers and producers, creating employment opportunities, and reinvesting in the community. Every detail reflects a story, an idea, and the ingenuity behind what becomes a true masterpiece.

PROJECT ORIGINS In these lands rich in tradition, the dream of entrepreneurs Maria Pia Viaro and Massimo Vallotto took shape, making sustainability a life choice. It began in 2015 with the purchase of the first lands and Villa Apollonio, whose records date back to the 16th century. After careful renovation, a Bistrot and later a Gourmet Restaurant opened in 2022, led by Michelin-starred chef Alessio Longhini. In 2017, an adjacent property with a 15th-century vernacular building was acquired, now home to the Ca’ da Roman organic farm, cultivating seven hectares of PIWI grapes, gardens, orchards, olive groves, cereals, monumental trees, and bee-friendly hedges, with biodiversity guiding every agricultural choice.

CHEF ALESSIO LONGHINI Born in 1988, after hotel studies and international experience, he worked with Corrado Fasolato at Met in Venice and Norbert Niederkofler at St. Hubertus – Rosalpina in San Cassiano. In 2018 he earned a Michelin star for Stube Gourmet at Hotel Europa, Asiago, and was named Young Chef of the Year by the guide. Since December 2022, he serves as Executive Chef at Ca’ Apollonio Heritage.

THE 50-STEP KITCHEN Surrounded by a unique landscape, Ca’ Apollonio Heritage celebrates the balance between humans and nature through the sophisticated culinary experience of the Gourmet Restaurant. Here, Chef Longhini and his brigade transform ingredients into an ever-changing sensory choreography. The “50-step kitchen” refers to the distance from the table to the organic gardens and orchards, where nature inspires and human creativity interprets, using seasonal, locally sourced ingredients for a truly immersive experience.

THE GOURMET RESTAURANT – MICHELIN GUIDE 2025

Intimate and refined, the restaurant immerses guests in a sensory experience. Since 2025, Ca’ Apollonio Gourmet is recognized in the MICHELIN Guide Italy, becoming a destination for fine dining enthusiasts.
The restaurant, housed in the meticulously restored 16th-century villa, emphasizes sustainability, using produce from its organic gardens and responsibly selected local suppliers.
The Executive Chef offers two tasting journeys:
FAMILIARITÀ MENU – Invites guests to open the box of memories and emotions with Chef Longhini’s iconic dishes, blending wellness and delight in every detail.
CONGIUNZIONE MENU – A journey of flavors, textures, and aromas that bridges past and present, connecting diners with the future.
THE BISTROT Elegant yet informal, the Bistrot blends gastronomy with conviviality.
Lunches with colleagues or dinners with friends are enhanced by seasonal dishes designed to complement moments of pleasure and relaxation.

VENETO’S FIRST SUSTAINABLE RESTAURANT

In July 2024, Ca’ Apollonio achieved the highest Gold Restaurant level under the CER (Care’s Ethical Restaurant) certification, a prestigious international recognition that assesses a restaurant’s overall environmental impact according to measurable and verifiable standards. These include responsible sourcing of ingredients, efficient resource management, employee wellbeing, and active engagement with the local community. Seven different categories and 129 specific criteria were evaluated by Vireo srl, an accredited global certification body that verifies restaurants’ ethical commitment and measures environmental, social, and economic sustainability according to objective, verifiable standards. Ca’ Apollonio Heritage was awarded the CER Gold Restaurant, the highest certification level. CER – Care’s Ethical Restaurant was created by Mo-Food, the holding company of Paolo Ferretti and three-Michelin-star chef Norbert Niederkofler, with the goal of establishing the first comprehensive international certification for fully sustainable restaurants.

THE WINE CELLAR The Ca’ Apollonio Heritage wine list, with over 1,000 labels—including 100 dedicated to sparkling wines—offers a journey through producers who are genuinely attentive to the environment, respectful of nature’s cycles, and capable of creating wines of superior quality.
At the heart of Ca’ Apollonio Gourmet, the venue dedicated to culinary research, and Ca’ Apollonio Bistrot, the space designed for informal conviviality, the shared wine cellar experience celebrates the true pleasure of fine drinking.
Born from the collaboration of sommeliers Michele Griggio and André Senoner—Italy’s Best Sommelier 2002 (Vinoway)—the wine list is likely the most comprehensive selection of PIWI resistant grape varieties offered in a restaurant, reflecting this emerging movement in modern, tangibly sustainable viticulture.

at the Milan Wine Week 2024 and 2025.
